Understanding the Antinutritional Factors and Bioactive Compounds of Kodo Millet (Paspalum scrobiculatum) and Little Millet (Panicum sumatrense)

چکیده

Kodo and little millet (Kutki) have a variety of phytochemical constituents including derivatives hydroxybenzoic acid hydroxycinnamic acids, myricetin, catechin, luteolin, apigenin, daidzein, naringenin, kaempferol, quercetin with vast health benefits thus can be utilized as functional food ingredients. Millet-based foods their products physiological health-promoting impacts, notably antidiabetic, anti-obesity, cardiovascular disease, based on the actions phytochemicals, it plays major role in body’s immune system. However, antinutrients (tannins, oxalate, trypsin inhibitor, phytates) present these millets restrict utilization since factors bind essential nutrients make them unavailable. Therefore, this review suggested overcoming effects millets, thereby opening up important applications industries that may promote development novel foods. Various methods were discussed to eliminate antinutrient hence, holds immense significance industry for effectively utilizing develop value-added RTE/RTC products/functional food/beverages.
